Lavender's Costa Rica is a coffee with a story worth telling. The Zalmari Estate sits in the micro-region of Cachí in the Orosí Valley, nestled between volcanic mountain ranges where cold evening temperatures slow the ripening process and build complexity in every bean. Fourth-generation producer Cecilia Genis runs the farm with her mother, Marigold Murray — longtime members of the International Women's Coffee Alliance and recipients of the Women Care Certified designation, the first farm in their region to earn it.

The honey process gives this coffee its signature character: a silky, mouth-coating body that pairs beautifully with delicate orange blossom florals, red apple brightness, and a finish of raspberry sweetness. We roasted it with a relatively brisk profile and higher airflow to draw out those floral notes without losing the lushness only a honey process can deliver.

This is a coffee for slow mornings — a pour over when you want clarity, or a French press when you want full immersion. Either way, it's the kind of cup that makes you set down your phone.

Honey process coffee falls between washed and natural processing. After harvesting, the coffee cherry's skin is removed but a controlled amount of fruit mucilage — the sticky "honey" layer — is left on the bean during drying. This preserved fruit contact gives the Zalmari Estate Costa Rica its silky mouthfeel and natural sweetness without the fermented intensity of a full natural. For people who love clean, bright coffee but want more body than a washed process provides, honey process is a revelation.

Like all of our single-origin coffees, the Zalmari Estate Costa Rica is gently roasted to preserve the origin's natural flavor without harsh acidity. The Orosí Valley's altitude and volcanic soil contribute to a naturally balanced, smooth cup. If you're specifically looking for mold-free tested coffee, our house blends — including the Pearl Street Blend and Golden Hour Half Caff — are batch-tested for mold and mycotoxins. Our single-origin offerings, including this Costa Rica, are sourced through direct trade from vetted farms with rigorous quality standards, though they are not individually mold-tested.

This honey process shines in two methods. For a clean, floral cup, brew it as a V60 pour over: 25 grams of medium-fine ground coffee, 400ml of water just off the boil (201°F), poured slowly over 3:30 minutes. For a richer, silkier experience, use a French press: 50 grams of coarsely ground coffee, 800ml of water at 201°F, with a 5-minute steep. Both methods highlight what makes this coffee special — the florals in the pour over, the body in the French press.

Women Care Certified (WCC) is a certification designed to improve sustainable livelihoods for women involved in cultivating, processing, trading, and exporting coffee. The Zalmari Estate was the first farm in their region to earn it. Cecilia Genis and her mother Marigold Murray are also active members of the IWCA (International Women's Coffee Alliance), an organization that supports women's leadership throughout the global coffee supply chain.
