Three things: origin, roast profile, and process. Beans grown at lower altitudes or in certain regions (Brazil, Peru, Sumatra) tend to have lower natural acidity. Longer, slower roasting breaks down chlorogenic acids — which is why dark roasts are generally gentler than light roasts. And avoiding harsh processing methods (like over-fermentation during wet processing)
prevents additional acidity from developing. At Lavender, we work on all three — sourcing from naturally sweet-tending regions, roasting low and slow, and testing every house blend to confirm quality and purity.
